Vegan Sweet Potato Quinoa Patties

Here's a recipe for delicious healthy sweet potato quinoa patties! Great with Kewpie's Deep Roasted Sesame Dressing!
1. Heat olive oil in a large skillet over medium-low heat. Cook and stir yellow onion, add minced garlic and salt.

2. Stir in thyme and cook for about 30 seconds then transfer mixture into a large bowl.

3. Stir sweet potatoes, quinoa, sea salt, and black pepper together with onion mixture until well-combined. Divide mixture into golf-ball size balls and press into patties.

4. Heat vegan butter or coconut oil in a nonstick skillet over medium-high heat. Cook patties in hot oil until browned, about 2 minutes per side.
2 cups, Baked sweet potato. Skin removed & mashed
2 cups, Cooked quinoa
1 Medium yellow onion, diced
3 cloves, Garlic, crushed
1 tbsp, Fresh thyme, finely chopped
1 tsp, Extra virgin olive oil
Sea salt, to taste
Freshly cracked pepper
Vegan butter or coconut oil
1/4 cup, Kewpie Deep Roasted Sesame Dressing
