1 package rice vermicelli noodles
1 medium carrot, thinly sliced
1 small cucumber, peeled & seeded, chopped
1/2 mango, chopped
3 spring onions, thinly sliced
1/4 cup fresh cilantro, chopped
1 red chili, seed removed, chopped
1/4 cup dry roasted peanuts
1 cup Kewpie Mango Chia Dressing
