Green Vegetable Curry

Warm up with green vegetable curry this #Meatless #Monday!
1. Cook basmati rice per package instructions

2. Chop vegetables and cilantro

3. Heat coconut oil in a large wok or pan. Add spices and vegetables and cook over high heat for a few minutes

4. Reduce heat and add coconut milk and 3 tablespoons of Kewpie Coconut Wasabi Dressing. Simmer for 5-10 minutes

5. Serve over rice and garnish with cilantro
6 oz basmati rice
1 green pepper
1 fennel bulb
2 oz spinach
1/8 cup cilantro
2 tablespoons coconut oil
1 tablespoon fresh grated ginger (or ½ tablespoon dried ginger)
1 teaspoon cumin
2 teaspoons turmeric
1 cup coconut milk
2 tablespoons Kewpie Coconut Wasabi Dressing
