2. Heat a pan over a medium heat and melt the butter ghee. Add the minced garlic and red pepper flakes for a minute, until fragrant.
3. Add the scallops and cook for a few minutes so they are about halfway cooked.
4. Add lemon zest, parsley, paprika, salt and pepper to taste.
5. Cook until the scallops are firm and opaque.
